Happy Tuesday! This past weekend I went to the TWIX® Bites demo at my local Walmart. Immediately, one recipe came to mind – ice cream sandwich cake! A perfect, easy sweet treat to whip up for Memorial Day. I have been making this easy ice cream cake for years but the thought of adding TWIX to the mix had me excited to go home and create! I picked up two bags and was on my way!

I can’t wait to share this EASY recipe with you. It’s not even really a recipe because ALL of the ingredients are pre-made and it takes about 10 minutes to make! You won’t believe how delicious it is!

Ingredients

24 Ice Cream Sandwiches (I used vanilla but feel free to be creative!)
2 8oz containers of Cool Whip
2 Bags of TWIX Bites

Instructions

Pour both bags of TWIX bites into a blender and blend to crumbs. Set aside. Get out cake pan and line the bottom with ice cream sandwiches (you may have to cut some to make them fit - see image). Once you've got the first layer of ice cream sandwiches down, use 1/2 of the TWIX blend and sprinkle it over the top. Next, use 8oz (one tub) of Cool Whip and spread it over the ice cream sandwich/TWIX mix. Put down another layer of ice cream sandwiches, another layer (8oz) of Cool Whip and top with the remaining TWIX mix.

Notes

I keep mine in the freezer - it hardens the cool whip just a bit and makes this sweet treat perfect for those HOT summer days!
